Creamy Garlic Pasta Recipe
A comforting, restaurant-style pasta that’s rich, creamy, and full of garlic flavor. This recipe works great as a quick weeknight dinner or a cozy weekend treat.

Ingredients (Serves 2–3)
- 200g pasta – spaghetti, fettuccine, or penne work best
- 2 tbsp butter – for richness
- 1 tbsp olive oil – prevents the butter from burning
- 4–5 garlic cloves, finely minced – adjust based on how garlicky you like it
- 1 cup heavy cream (or ½ cup milk + ½ cup cream) – for a creamy base
- ½ cup grated parmesan cheese – adds nutty, salty depth
- ½ cup reserved pasta water – helps loosen the sauce
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tsp chili flakes (optional) – adds a light heat
- Fresh parsley, chopped – for color and freshness
- Optional add-ins: grilled chicken, sautéed mushrooms, spinach, shrimp, or sun-dried tomatoes
Step-by-Step Instructions
Step 1: Cook the Pasta
- Fill a large pot with water, add 1–2 teaspoons of salt, and bring it to a boil.
- Add the pasta and cook according to the package directions until al dente (slightly firm to the bite).
- Before draining, save about half a cup of the starchy pasta water—it’s key to making a silky sauce later.
- Drain the pasta and toss it lightly with a drizzle of olive oil to prevent sticking.
Step 2: Make the Garlic Sauce
- Heat butter and olive oil together in a large pan over medium heat.
- Add the minced garlic and sauté for about 1–2 minutes, just until it turns fragrant and golden (avoid browning—it turns bitter).
- Pour in the heavy cream, stirring continuously. Lower the heat to medium-low to avoid curdling.
Step 3: Add Cheese and Seasonings
- Add the grated parmesan cheese, stirring until it melts smoothly into the sauce.
- Season with salt, black pepper, and chili flakes.
- Let the sauce simmer for 2–3 minutes until it slightly thickens and coats the spoon.
Step 4: Combine Pasta with Sauce
- Add the cooked pasta directly into the pan with the sauce.
- Toss gently using tongs to coat each strand evenly.
- Add a splash of pasta water (a few tablespoons at a time) until the sauce reaches your desired consistency—creamy but not runny.
Step 5: Garnish & Serve
- Sprinkle chopped fresh parsley for a bright, herby finish.
- Top with extra parmesan cheese and a pinch of black pepper.
- Serve immediately while it’s hot and creamy.
Tips & Variations
- For extra protein: Add cooked chicken, shrimp, or tofu.
- For a veggie twist: Stir in spinach, cherry tomatoes, or sautéed mushrooms.
- Make it lighter: Use half milk and half cream, or try evaporated milk for a lower-fat option.
- Storage: Keep leftovers in an airtight container for up to 2 days. Reheat with a splash of milk to revive the creamy texture.
