Creamy Garlic Pasta Recipe

A comforting, restaurant-style pasta that’s rich, creamy, and full of garlic flavor. This recipe works great as a quick weeknight dinner or a cozy weekend treat.

Ingredients (Serves 2–3)

  • 200g pasta – spaghetti, fettuccine, or penne work best
  • 2 tbsp butter – for richness
  • 1 tbsp olive oil – prevents the butter from burning
  • 4–5 garlic cloves, finely minced – adjust based on how garlicky you like it
  • 1 cup heavy cream (or ½ cup milk + ½ cup cream) – for a creamy base
  • ½ cup grated parmesan cheese – adds nutty, salty depth
  • ½ cup reserved pasta water – helps loosen the sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp chili flakes (optional) – adds a light heat
  • Fresh parsley, chopped – for color and freshness
  • Optional add-ins: grilled chicken, sautéed mushrooms, spinach, shrimp, or sun-dried tomatoes

Step-by-Step Instructions

Step 1: Cook the Pasta

  1. Fill a large pot with water, add 1–2 teaspoons of salt, and bring it to a boil.
  2. Add the pasta and cook according to the package directions until al dente (slightly firm to the bite).
  3. Before draining, save about half a cup of the starchy pasta water—it’s key to making a silky sauce later.
  4. Drain the pasta and toss it lightly with a drizzle of olive oil to prevent sticking.

Step 2: Make the Garlic Sauce

  1. Heat butter and olive oil together in a large pan over medium heat.
  2. Add the minced garlic and sauté for about 1–2 minutes, just until it turns fragrant and golden (avoid browning—it turns bitter).
  3. Pour in the heavy cream, stirring continuously. Lower the heat to medium-low to avoid curdling.

Step 3: Add Cheese and Seasonings

  1. Add the grated parmesan cheese, stirring until it melts smoothly into the sauce.
  2. Season with salt, black pepper, and chili flakes.
  3. Let the sauce simmer for 2–3 minutes until it slightly thickens and coats the spoon.

Step 4: Combine Pasta with Sauce

  1. Add the cooked pasta directly into the pan with the sauce.
  2. Toss gently using tongs to coat each strand evenly.
  3. Add a splash of pasta water (a few tablespoons at a time) until the sauce reaches your desired consistency—creamy but not runny.

Step 5: Garnish & Serve

  1. Sprinkle chopped fresh parsley for a bright, herby finish.
  2. Top with extra parmesan cheese and a pinch of black pepper.
  3. Serve immediately while it’s hot and creamy.

Tips & Variations

  • For extra protein: Add cooked chicken, shrimp, or tofu.
  • For a veggie twist: Stir in spinach, cherry tomatoes, or sautéed mushrooms.
  • Make it lighter: Use half milk and half cream, or try evaporated milk for a lower-fat option.
  • Storage: Keep leftovers in an airtight container for up to 2 days. Reheat with a splash of milk to revive the creamy texture.
