Last week, my life was so busy that even cooking seemed like a task. Meetings, deadlines, household chores—everything was happening simultaneously. Normally, during such hectic weeks, I either order food from outside or make do with biscuits and tea. But this time, I decided to eat healthy, no matter how rushed I was. In the process, I found 5 simple recipes that not only made me cook quickly but also kept my energy up throughout the week. All these dishes are part of my personal kitchen experiments—easy, practical, and beginner-friendly.

1. Veggie Poha: 10 Minutes, Zero Stress

Poha is a savior dish for me. Last Tuesday morning I was literally getting ready for a 9:30 meeting, and all I had in the fridge was onions, capsicum and some peas. I quickly put oil, mustard seeds, green chillies and vegetables in a pan – sautéed for 2 minutes, then added washed poha and a squeeze of lemon.

Why this saved me:

  • Light but filling
  • 10 minutes me ready
  • Mood instantly uplift ho gaya lemon flavor se

Seriously, this dish reduced my entire morning stress.

2. One-Pot Masala Pasta: Ultimate Mid-Week Comfort Food

There were half-day office calls on Wednesday, and I needed something tasty—but the cooking time was zero. So I tried one-pot pasta. I put pasta, water, a little milk, turmeric, chili flakes, salt, garlic, and vegetables in a pot. I brought everything to a boil. Once the pasta was soft, I added a little cheese and mixed it in.

Why I loved it:

  • Only one vessel is dirty
  • Kids-friendly, mood-friendly, everything-friendly
  • Creamy, warm, comforting

It literally gave me a warm hug for the week.

3. Besan Chilla: The 7-Minute Dinner That Saved My Energy

Sometimes making dinner can be the hardest part, especially after working on a screen all day. I was feeling exactly like that on Thursday. Then I made besan chila. Gram flour, salt, onion, chilli, turmeric, coriander – a little water and dal batter is ready. 2 chillas were made in a non-stick pan within minutes.

Why this worked:

  • Zero chopping effort
  • High in protein
  • Light on stomach but filling enough

After dinner, I felt like I made a healthy choice, no matter how stressful the day was.

4. Curd Rice: The Calmness Bowl

On Friday, I wanted something both comforting and digestion-friendly. So, I made my all-time favorite— curd rice . Simply took leftover rice, added curd, some water, salt, and tadka (mustard, curry leaves, hing). That’s it.

Why it saved me:

  • Ultimate cooling food
  • Digestive, soothing, comforting
  • No cooking stress

Genuinely, this is my “reset food”.

5. Banana Oats Smoothie: The Quickest Meal That Kept Me Going

A bowl of banana oats topped with banana slices, walnuts, and honey, with a glass of honey and three bananas in the background.

Saturday morning, I had no time, but I needed energy. I put banana, oats, milk, honey, and a little peanut butter in the blender. 1 minute me smoothie ready.

Why I swear by this:

  • Perfect for rushed mornings
  • Keeps you full for 3–4 hours
  • Sweet, creamy aur guilt-free

This smoothie kept me energetic for half a day.
